I do not like to warm leftover chicken — either it has to be really zapped with heat or eaten cold. So how do you make leftover cold chicken interesting????
There is always the chicken sandwich but since I should not eat bread….
Sometimes I make a dressing of good quality olive oil, balsamic vinegar, parsley and spices from Provence which I drizzle over the chicken. Very nice with oven roasted rataoillle and maybe even/or some potatoes baked in cream and cheese. The other recipes will follow.
