1 large Red onion ; cut in large cubes
1 large Courgette ; cut in large cubes
1 large Aubergine ; cut in large cubes
1 large Red bell pepper ; cut in chunks
1 large Orange bell pepper ; cut in chunks
500 gram Small tomatoes ; cut in pieces
4 cloves Garlic ; cut in half
3 tablespoon Olive oil ; tablespoons olive oil
Salt and black pepper ; and black pepper
1 teaspoon Provence herb blend

Put all the ingredients into a roasting tray or large shallow casserole and sprinkle with the oil and some salt and pepper. Mix with your hands so that all the vegetables get well coated.
Bake, uncovered, a preheated oven, 180 degrees C, about a half an hour or until the vegetables are browned at the edges, tender and smelling gorgeous.
Season with more salt and pepper if necessary.
