Braised Beef Short Ribs with carmelized onions

  A yummy way to cook and inexpensive cut of beef.  It is so easy!

1 kilogram Beef short ribs ; as required
3 medium Onions ; thinly sliced
salt
pepper
4 tablespoon Cooking Sherry

-= Instructions =-
Brown the meat well in olive oil.  Add the onions, salt and pepper to taste and the sherry.  Simmer in your tagine for 3-4 hours.  If there is too much liquid in the pan when the meat is done, raise the heat and boil the liquid down.

If you don’t have a tagine, place the meat in a casserole with a tight lid (alternately cover with heavy duty aluminum foil) and bake at 180° degrees for about 3 hours.  Make sure that the dish does not cook dry.
