Cheesy Cauliflower Soup

It is the Cauliflower which thickens this soup so there is no flour involved at all.

1 head Cauliflower ; cut
4 cups Chicken stock ; homemade is the best
1 cup Cheddar ; grated
salt and pepper ; to taste
Cream ; to taste

-= Instructions =-
Boil the cauliflower in the stock until it is very soft.  Pour the mixture together with the cheese into a blender and blend to a creamy consistency.  Add salt and pepper if necessary.  Add the amount of cream you want.

I like to serve with a thin slice of sweet pepper and a small grinding of chili flakes.
