Chicken tostada

 You can make this using a fried flour tortilla as a basis or just leave it out for a lower carb meal.  It will still taste like a tostada because it is not the tortilla which makes the dish, it is all the stuff that goes on top!  Nice to know that some carbs are totally unnecessary, isn’t it?

A tostada is a fried flour tortilla with mexican beans, meat of some variety and a salad on top.  This wonderful combination of ingredients is topped off with salsa and sour cream — a real Tex-Mex satisfying meal.

This picture shows a tortilla base, so I will give that in the recipe.  We had it one day when I had had VERY few carbs so I figured that one tortilla would not destroy my plan….

Serving Size: 4
-= Ingredients =-
4 Mexican flour tortillas ; fried golden brown
1 can Refried beans
Leftover chicken ; in small pieces
1 cup Cheddar ; grated
Lettuce ; torn into small pieces
Tomato ; chopped
1 Chili ; chopped
1 medium Onion ; chopped
1 Bell pepper ; chopped or in rings (like in picture)
1 Avocado ; in slices
Mexican salsa ; to taste
sour cream ; to taste

-= Instructions =-
Fry the tortillas and let them drain on paper towels.  Put one tortilla on each plate and spread with refried beans which have been warmed up in the microwave.

Sprinkle with cheese and the chicken.  Then add the salad ingredients as decoratively as you can.

Top with salsa and sour cream.

Sometimes I heat the chicken in the salsa.  Taste is the same, but helps the cheese to melt.
