Jamaican Chicken

This chicken is marinated overnight so that all the good flavors penetrate into the meat.

-= Ingredients =-
1 whole Chicken
1/4 cup Onion ; finely chopped
2 tablespoon Brown sugar
1/4 cup Dark soy sauce
4 tablespoon sherry vinegar
2 tablespoon Thyme ; chopped
1 tablespoon sesame seeds
4 cloves Garlic ; finely chopped
1 Green or red chili ; finely chopped
2 tablespoon Olive oil
1 Tomato ; finely chopped
Juice of one lime

Cook all the ingredients except the chicken until the onion is tender.  Blend the marinade in a food processor and cool.  Use half of the cooled mixture as a marinade keeping the rest as a dip when serving.

Marinade the chicken overnight and bake it in the oven on moderate heat (about 180°) for about 30 minutes.  Increase the temperature towards the end.  You can even use the grill function to brown it properly.  During the baking time, use the pan juices and the marinate to baste the bird.

Serve with the dip and a salad.
