Nutty Salmon

Deliciously crunchy way to bake salmon.  Serve with a big vegetable salad.

-= Ingredients =-
2 portions salmon Fillet
50 gram Nuts ; chopped fine
1 Egg yolk
2 tablespoon sour Cream
1 tablespoon Parmesan ; grated
1 tablespoon Butter
1 tablespoon Roasted Garlic ; optional
1 teaspoon Chili flakes ; optional
salt and Pepper ; to taste

-= Instructions =-
Season the salmon with salt and pepper.  Mix the egg yolk and parmesan with the sour cream and spread on the salmon.

Gently fry the nuts in the butter together with the garlic and chili until the are lightly colored.  Spread the nut mixture on the salmon and bake in the oven at 180° for about 30 minutes or until done but still moist.
