Low carb Lasagna

Make your favorite lasagna using fried aubergine and/or zucchini slices as ‘pasta’!  It works a treat.

Instead of bechamel or white sauce, use a mixture of sour cream and beaten egg.  If you want a fairly stiff layer of ‘white sauce’, use more beaten eggs.   If I use a simple tomato sauce, I make the white layer with more egg so that it stands out and provides more protein.  If I am using a more substantial pasta sauce (like Bolognese), I use less egg.  Sometimes I use sour cream on its own if I am not bothered about a layer of white.

This is a simple way to turn a favorite high carb meal into a favorite low carb meal.

Vegetables ARE important in a low carb diet

I don’t know where the myth that low carb diets do not allow vegetables come from, but it is utterly false.  Vegetables are a very important part of a balanced diet and sustainable low carb diets need to be balanced.  Induction is, after all, a short-term thing.  I don’t know a lot about the patented diets, but I do know that they do not recommend a prolonged induction phase.  The word ‘induction’ says it all.

Not all vegetables are equally low carbohydrate, but you need to look at a balanced, and sustainable diet .  A sustainable diet means changing the way you live and the way you eat.  It is not a 1-3 month fad diet.  A diet without vegetables is unthinkable for me and I am still losing weight.

A diet without changing the way you move your body is also unthinkable.  There is only one way to lose weight:  eat healthier food and get more exercise.  It is as simple and as difficult as that.
